Sydney’s obsession with food extends from our fickle affections for fashionable restaurants, to showing one’s own prowess in the kitchen, to feeling guilty about food miles. Restaurateurs-turned-providores Alex Herbert (Bird Cow Fish) and Tony Bilson, author of Insatiable, and novelist, cook and food writer Charlotte Wood talk to Caroline Baum.

Charlotte Wood's first novel, Pieces of a Girl, was published in 1999 and won the 1998 Jim Hamilton Award for an unpublished manuscript. Both this and her second novel, The Submerged Cathedral, were highly praised by reviewers and award judges; the latter was shortlisted for the 2005 Miles Franklin Literary Award and the 2005 Commonwealth Writers' Prize, South East Asia and Pacific. Her third novel, The Children, received rave reviews and was a bestseller, selling over 10,000 copies in trade paperback. Charlotte lives in Sydney.

Tony Bilson, the ‘Godfather of Australian Cuisine’, has been recognised as one of Australia’s leading chefs for more than 40 years and his restaurants have been milestones in the advancement of Australian gastronomy. Tony has published five books and contributed to major wine and food magazines as well as newspapers around Australia. In January 2010 he launched his festival, Cuisine NOW, which has become an annual event in the culinary calendar. Tony lives in Sydney.

Alex Herbert is the chef and co-founder of Bird Cow Fish. Established in Balmain in 1996, the restaurant moved to Surry Hills in 2006 and was awarded its first toque, which it maintained until its closure in 2012. Alex hosted dozens of food writers’ dinners at Bird Cow Fish and in 2012 she plans to develop her Tuesday Salon table, where influential people in the hospitality industry will gather to share food, wine and ideas.
